How to create a single patch input file?

Can anyone tell me the procedure to create a single patch file for
a set of files in a directory tree.  Is there a common script that most
people use?  Ideally this would work on a variety of Unix platforms with
the same tree structure.  An example of this would be patches to the
X-windows distribution or GNU software.  If anyone can provide me with
information as to how to do this, I would really appreciate it.  Thanks.

% diff -cr old_version new_version > patch_file

Where 'old_version' is tree for old version of program and
'new_version' is that version of program/software to what
patch is bring old_version up.

That however don't take care of new files.
